Bresaola, an industry-breeders pact for a 100% Italian supply chain

Triple the production of 100% Made in Italy bresaola to bring more than 1.5 million kilos to the market every year thanks to the use of meat from a controlled and guaranteed supply chain of national farms. This is the aim of the agreement signed at the International Forum of Agriculture and Food which is taking place in Rome between the Italian Industry, Coldiretti, and the Rigamonti, Fratelli Beretta, Bresaola Del Zoppo and Salumificio Panzeri cured meat factories.

“We are very pleased to have involved, in a project that saw us pioneers in 2017, an important group of producers who, together with us, today represent about 60% of the Bresaola della Valtellina market”, explains Claudio Palladi, CEO of Rigamonti.

Palladi and with him Vittorio Berretta, president and CEO of the salami factory of the same name, underline how “the project of the Italian supply chain joins the IGP product and aims to enhance the mountain territory”. The CEO of Rigamonti then adds: «The 100% Italian supply chain is a complex challenge, in which we strongly believed and in which we have invested from the beginning. But it is necessary to create a system. A specification will have to be created in order to obtain a DOP but it is an inclusive project, open to all producers associated with the Consortium and to all small artisan producers “.

The overall production of Bresaola della Valtellina PGI referring to the 16 companies belonging to the Consortium stood at 12,600 tons in 2020 (-8.78% on 2019). In total, just over 35 thousand tons of raw material (90% of the cut tip of the hip), of selected European and world origin, have been started to produce Bresaola della Valtellina PGI, with different percentages from producer to producer. On the consumption front, which has been gradually expanding for 20 years, the sector recorded a value of 454 million euros (-7.59% on 2019).

According to Ettore Prandini, the president of Coldioretti, “the promotion of 100% Italian bresaola with meat is a choice of producers that responds to the demand of a growing number of consumers who believe in the quality of Made in Italy, but it is also an added value for the territory with the support of the economy and employment “. And he adds: “The agreement between farmers and industry is an important project that looks to the future and a response to those who, especially at an international level, have decided to invest and focus on meat in test tubes”.
