“Thanks to diving – says Kottakhs – wines receive longevity, and this is useful for example for rosé wines, because the process under water favors aging in the bottle, giving the right air conditioning».

The objective of the underwater cellaring of 20 types of wine, explains Kottakhs, «is also to carry out scientific research. In the world there are 36 companies that use diving techniques; of these, 35 are also wine producers. Only Jamin is not but he offers this service to others and he does it with scientific method. We were the first, in 2008, to map the rules for wine immersion and to file patents in this field, defining best practices. With this immersion we continue on that path ».

The 281 lenders

It is no coincidence, he adds, “that Jamin on Mamacrowd platform achieved the best result of 2021 in terms of engagement, finding 281 financing partners. But the extremely pleasant thing is that, among these, there are three of the five wineries that, in Italy, make underwater cellars ».

Kottakhs concludes by underlining how the project carried out «makes Portofino, and therefore Italy, a nerve center on a world scale in research on underwater techniques related to oenology. The Portofino winery, born also thanks to the trust placed in Jamin by the Marine Protected Area, from today it becomes a precious laboratory for analysis and study ».
