Soak dried chickpeas the day before. To do this, put the chickpeas in a bowl with twice the amount of water and let them soak for at least 12 hours. If necessary, add a little more water as the chickpeas will absorb some of the water.

Drain the soaking water and wash the chickpeas thoroughly with fresh water (uncooked chickpeas, like other legumes, contain the toxin phasin). Add the chickpeas with fresh water and a little baking powder (no salt!) and cook over a gentle heat for 30-45 minutes. Only add a pinch of salt at the end of the cooking time. Once cooked, the chickpeas should mash easily but also hold their shape. Place the chickpeas in a sieve, rinse and set aside.

Peel the turnip and cut into bite-sized cubes. Peel and dice the parsnips, carrots and onions as well. Peel and chop the garlic, as well as the chili pepper. Grate the peel of the citrus fruits and squeeze out the juice, set aside. Put the sesame seeds in a pan and briefly roast them without fat. Heat olive oil in a pan and briefly sauté the vegetables and onions.

Sprinkle in baharat or another Arabic spice mixture (such as a homemade mixture of cumin, paprika powder, chili, nutmeg and turmeric) and mix with the vegetables. Also briefly roast the spice mixture. But only briefly, otherwise the spices could become bitter.

Pour in the tomato juice and the squeezed juice. Add the citrus fruit zest, soy sauce, garlic, chili, salt and a little honey. Let everything simmer over moderate heat for about 30 minutes. Depending on the thickness of the turnip cubes, the cooking time can be shortened or extended. In the last few minutes, add the cooked chickpeas and heat through the stew. Chop the parsley and sprinkle it over the stew at the end with the sesame seeds.
