Ingredients:

For the consommé, peel and chop the garlic, ginger and shallot and fry them in a large pot with vegetable oil. Reserve 1 mushroom per person of each type of mushroom, clean, chop and add the remaining mushrooms. Deglaze with cognac and port wine. Add water and stock and simmer gently for about 30 minutes. Season with salt and pepper.

Portion the fillet and fry briefly in a pan. Then let it simmer in the mushroom soup that is no longer boiling.

Meanwhile, clean the corn and carrots and sauté them in a pan with a little butter. Add the remaining mushrooms and cook briefly.

Arrange:

Place vegetables and mushrooms on soup plates. Remove the fillets from the mushroom soup and distribute them on plates. Pour the soup through a fine sieve or press it in a stamp jug. Pour into the plates at the table.
