Ready-made pizza, convenience cereal, sweet soda – highly processed foods are everywhere. But what exactly is so bad about it? About a difficult discussion with a large pinch of mendacity.
Good leadership is important. We’re not talking about prison inmates being released early, but about dough. The most important ingredients are time and space. āHere, the one for ciabatta still needs ten hours,ā says Samuel Hrasky. The 31-year-old master baker lifts the lid from the tub in which the light mixture ripens and forms small bubbles. These are important so that the ciabatta roll has the typical holes and juicy taste. āIf the pores are right, it usually tastes good,ā says Hrasky, managing director of the āVor Ortā bakery, a family business in Neuried on the southwest edge of Munich. In 2011 he baked “Europe’s best bread”, and in 2023 a baker from Hrasky’s company became European baking champion.
