Kronenhalle: After 1-star reviews because of the SRF documentary: chef speaks out

The broadcast of the first episode of the SRF documentary series about the Kronenhalle sparked criticism against the restaurant among viewers. At the center of the complaints is the chef Peter Schärer and his treatment of his employees.

In the first episode, the chef gives an insight into everyday work in the kitchen. After some of the documentary viewers were outraged by his harsh manner on Google reviews and gave the business a one-star rating, the chef now reacts to it in an interview.

“Old school” works

When asked whether he describes himself as an “old school” boss, Peter Schärer refers to his career. «I started my apprenticeship in 1979, classic French cuisine is my basis. I am still close to my teacher at the Berghalde restaurant in Zurich Witikon and we still exchange ideas regularly. If that’s what you mean by ‘old school’, then yes.”

He was asked the question during an interview “Gault & Millau” placed. The interviewer admits that the question is aimed at the chef’s appearance in the SRF documentary. This would have given a lot to talk about.

“I live by what I ask of my people,” explains Peter Schärer when asked how he perceives his role as boss. “Things like punctuality, cleanliness and a well-groomed appearance are important to me, and I set a good example.” Then he adds: “Of my three sous chefs, the one who has been here the least long has been working with me for 23 years. So my leadership style seems to be working.”
