ROME (ITALPRESS) – The challenge of a healthy and sustainable diet can be played and won right from school. As part of the NutriSUSFood project – Nutritional security for healthy and SUStainable food consumption and of the European “knowledge hub” Systemic, the researchers of the Crea Alimenti e Nutrrizione, in collaboration with the Antonio Ruberti Department of Automatic and Management Computer Engineering of Sapienza University of Rome , have reworked 52 Italian school menus with a view to sustainability. We started from the paper published in 2020 on the modeling of the Italian diet, to develop a database which, by integrating the database of national food consumption of the Crea Alimenti e Nutrrizione with food composition data and those relating to the emission of effect gases greenhouse, was able to attribute a specific greenhouse gas emission value to each food. 52 school catering menus in Italy were collected, on which the nutritional breakdown of the recipes was carried out and the corresponding CO2 value was applied to each food. A modeling technique was applied to the 194 dishes derived from this work for the production of a typical menu that combines nutritional adequacy and acceptability, according to the criteria of the Guidelines for a healthy Italian diet of Crea, with reduced emissions of climate-altering gases. The result is a 4-week meal plan, structured on the basis of pre-existing menus, which perfectly combines characteristics of nutritional adequacy with those of minimizing CO2 emissions. “The combinations – explains Laura Rossi, researcher and nutritionist Crea Alimenti e Nutrizionista, one of the authors of the publication – are characterized by a strong vegetable component, with an important presence of legumes, white meats and eggs.
