“Our story – says Carlomaria Balzola who manages the pastry shop in the center of Alassio with her sister Maria Teresa – has its roots in 1902, when the great-grandfather Pasquale Balzola, a liquorist, moved from Piedmont to settle in Alassio, taking over an inn and immediately creating new habits and rituals. It was grandfather Rinaldo Balzola who, having graduated in the sophisticated confectionery art of the Pfatisch school, one of the best known pastry chefs of all time, invented and patented the famous Baci di Alassio in 1919. Nonno Rinaldo was even the first pastry chef at the Royal House of Savoy. It will be a great pleasure for me to tell our story to visitors, I am really proud of it and like me my whole family ».
