Contrast Amsterdam has opened its doors a year ago, in a modern and stylish ship at the NDSM Werf. And you can say that we fell a little bit in love with this special restaurant during dinner! What a special atmosphere, delicious dishes and a beautiful location with a view over the IJ. We’d love to tell you more about it!
Contrast Amsterdam: special restaurant with exciting Basque dishes on the NDSM Werf
Contrast can be found in Amsterdam North, at the NDSM Werf. In a beautifully designed ship, with a beautiful view over the IJ. The location alone makes us very enthusiastic. A nice bright space with large windows, modern yet warm and welcoming. On warm days there is room for a terrace on the deck, and be sure to take a look downstairs where the art gallery is located.

New Basque Cuisine at Contrast Amsterdam
We are warmly welcomed and sit down at the table. They serve at Contrast New Basque Cuisine: inspired by Basque cuisine, with special flavors and textures, and with organic, seasonal and local ingredients. Part of the team also sails as we speak around the world, to purchase special wines and other ingredients. Chef Iñaki Bolumburu comes from the Bilbao area and once even worked in the kitchen of Noma, so we are really looking forward to his food. We immediately see him working in the open kitchen when we enter. And when he comes to the restaurant for a chat later, his passion for food and the Basque Country radiates from him. To make you extra happy!

Changing 5- or 8-course menu with matching wines
And then the food! At Contrast you can choose from a changing 8- or 5-course menu. This time we taste the 8-course menu, including the wine arrangement of natural, organic and biodynamic wines. And wow: we are extremely impressed. We start with a glass of cremant and a first dish served in an oyster shell: elstar apple, oyster emulsion with lovage oil and fish roe. Wonderfully fresh, with subtle flavors of the sea.

Elegant dishes that will blow you off your chair
Every dish blows us off our seats again. Our absolute favorites? The double-shelled peas in a black bean sauce and the cured egg yolk are elegant and you can really taste the quality of the ingredients here. And the lamb rouleau on topinambour cream with chicory is a truly heart-warming dish. And fingers crossed that the turbot will remain on the menu for a while: it seems simple, just the fish that is slightly salted and seasoned, but this is so very tasty!

A special evening at Contrast Amsterdam
When our desserts arrive on the table after a cheese board, we are perfectly happy. The perfect pink rhubarb in milk ice cream is such a beautiful fresh dessert. And we finish with a chocolate cake that has a slightly firmer taste, with strawberry powder and chamomile infused pudding. Contrast really gives you a special experience, a journey through culinary highlights and you feel and taste the passion with every bite. Highly recommended!
