Ingredients:

Peel the celery and cut it into 1-2 cm thick slices. Cut the slices into thin strips using a vegetable peeler. Place the celery strips in a bowl and mix with olive oil, nut oil, apple balsamic vinegar and a little black nut broth. Instead of stock, you can also add some maple syrup or honey. Add salt and pepper, knead the vegetables thoroughly with your hands and let them steep a little.

Dice wholemeal bread and toast it in olive oil until crispy. Put the walnuts in a pan with maple syrup and caramelize, then season lightly with salt. Clean the purslane and cut the black nuts into slices. Wash, pick and chop the parsley.

Place the salad on a plate and sprinkle with the walnuts and bread cubes. Place a heap of purslane and a few slices of black nuts on top. Finally, sprinkle everything with freshly grated horseradish and parsley.
