If something has to be done quickly in the evening after work, yesterday’s vegetable rice is often briefly heated in the pan and the cold chicken is heated in the oven – dinner is ready.
But you shouldn’t reheat all foods.
Potatoes – be sure to store them in the refrigerator
Roast potatoes are a good way to use up potatoes from the day before. The already cooked potatoes should definitely be stored in the refrigerator. If you leave them in the kitchen, bacteria can form which, in the worst case, can lead to food poisoning.
Roast poultry properly for further consumption
With chicken and eggs, the problem lies in the proteins. When cold chicken is reheated, the protein structure changes.
The stomach cannot cope with this at all and reacts with indigestion. It is only certain if the cold chicken is fried really well again (it should literally be steaming from the heat). The following applies to eggs: boil once and then eat immediately.
Warm up the soup – be careful with spinach, celery and beetroot
In most cases, you don’t have to worry about reheating soup. But if the dishes contain celery, spinach or beetroot, caution is advised: because of the nitrates, toxins can be released when reheated and even carcinogenic substances can be formed.
Mushrooms – spoil quickly
It is often said that mushrooms should never be warmed up because this makes them poisonous. The myth has persisted and dates back to a time when storing food was a little more difficult than it is today.
Because mushrooms spoil quickly, you should still keep a few things in mind:
Serve mushrooms as soon as they are fully cooked. Put leftovers in the fridge. They can be kept there covered for a maximum of 1-2 days. Before eating again, warm the mushrooms to at least 70 degrees.
Rice – does not last longer than two days
For a long time there too it was said: don’t warm it up because it is susceptible to bacteria. But don’t worry – you can enjoy the delicious Thai curry again the next day without feeling guilty. However, you should not store the rice for longer than two days.
