The first exhibition dedicated to salamis from Friuli Venezia Giulia, organized by ONAS, the National Organization of Cured Meat Tasters, has ended.
In the conference room of the Museum of Oriental Art of Trieste, the councilor for Culture and Tourism Policies of the Municipality of Trieste, Giorgio Rossi, the director of the Fuocolento magazine and food and wine historian Stefano Cosma spoke on the “Tradition of pork in FVG”, by the Director of the Department of Agri-Food, Environmental and Animal Sciences of the University of Udine Edi Piasentier on the topic of “Animal welfare and quality of the final product” and by the researcher in animal production Gian Luigi Restelli on the “Defects of salami”.
The event concluded with the awarding of awards to the producers by the head of the ONAS FVG Delegation, Vincenzo di Nuzzo.
Over 30 producers from the region participated in the initiative, whose products were evaluated by a technical commission of seven ONAS Master Tasters from various Italian Delegations and by an approval panel made up of 12 sensory analysis experts. The organization of the evaluation sessions of the salamis in competition was carried out in collaboration with the Ad Formandum hotel training school of Trieste.
