Maintaining a regular blood sugar level allows, in particular, the central nervous system to perform its functions, because it needs a continuous flow of glucose.

This occurs thanks to a regulation system that allows you to keep your blood sugar as stable as possible during the day, even in the case of fasting. The primary source of glucose is food, but if needed it can also be synthesized within the body itself. It is the liver, in fact, that ensures the supply of glucose through two metabolic processes: glycogenolysis, or the degradation of glycogen to obtain glucose and gluconeogenesis, or the process by which a glucose compound is converted into glucose.

Normal fasting blood glucose levels range from> 70 to <100 mg / dL. In regular conditions, after the meal, the pancreas increases the secretion of insulin to ensure that the glucose ingested with food is used by the cells.

Conversely, in the case of overweight or obesity, a phenomenon known as “insulin resistance” develops. This is a particular condition characterized by a reduced ability of the cells of the peripheral organs, in particular muscles, adipose tissue and liver, to respond to insulin.

Pasta is one of the most adored foods and often also the first to be quickly renounced at the table. This is especially the case if you have weight or health problems such as high blood sugar.
