Zucchini, oatmeal, eggs, cottage cheese – today’s recipe is based on these ingredients. In my house it is loved by young and old alike. It is high in protein and is perfect if you are working out or watching your weight. And the best? It takes almost 10 minutes to prepare! Have I piqued your interest? Then straight to the recipe!

Recipe for oatmeal zucchini rolls

Zucchini are in season here in summer, but are available in the supermarket almost all year round. This recipe doesn’t require a large quantity, so you can buy 1-2 zucchini before the season starts. If you have a large supply in the summer, you can freeze the zucchini and use it all year round.

But what makes these rolls so soft and rich in protein is the cottage cheese. This ingredient has a place of honor in weight loss diets and is a good addition to baked goods because of its neutral taste.

The ingredient list

2 eggs 200 g fine oat flakes 200 g cottage cheese half a zucchini (approx. 150 g) 2 tbsp olive oil 1 tsp baking powder 1/2 tsp salt 1-2 tbsp seeds and kernels, for example sunflower seeds, pumpkin seeds, linseed etc. (optional)

Note: You can also make the recipe gluten-free if you use gluten-free oatmeal.

Preheat the oven to 215 °C and line a baking tray with baking paper.

Grate the zucchini and squeeze out the excess liquid. This works best with a cheesecloth, but can also be done by hand.

Whisk the eggs into a large bowl. Add the cottage cheese and the remaining ingredients except the zucchini and stir well until well combined. Now mix in the grated zucchini.

Take equal parts of the mixture with a spoon or the ice cream scoop, form the rolls and place them on the baking tray. Sprinkle with seeds if desired.

Bake the oatmeal zucchini rolls for about 25 minutes until they turn golden brown.

How do the rolls taste?

These rolls are not like the classic ones you get from the bakery. Their texture is also different, especially if you use fine oat flakes. But you can also use oat flour to make them even more like bread.

I call them rolls because for me they can easily replace bread for breakfast. Both with any topping or on their own, they taste delicious and will satisfy your hunger for longer than regular bread. See for yourself!

Variations on the recipe

Of course, you can refine and vary the recipe as you wish. Next, I’ll try, for example, replacing the zucchini with carrot or combining both. A little grated cheese in the dough or for sprinkling also sounds like a good idea, doesn’t it?

Another great option would be to make the rolls sweet. Instead of salt you can use some sugar or another sweetener of your choice. Chocolate chips in the dough would also go well with the sweet breakfast rolls.
