The history of the confectionery is adorable. Each sweet has a different origin. Celebrations, stories of love, victories, or even the fear of young people who were learning, and when trying to hide the mistakes made in the recipe from their masters, they ended up discovering brilliant ideas that became classic sweets. For a long time, the pleasure of eating was associated with the sin of gluttony, as the rare reports that we find were considered at that time a waste of time.

The first records of sweets date back to the 1st century BC – the time of Cicero, the great Roman philosopher. Creams and puddings were produced by mixing eggs, honey, milk and black pepper, and then roasted or boiled until they reached a dense consistency. It was also common to caramelize almonds and hazelnuts with honey, obtaining something similar to our pé-de-moleque, as well as stuffing dried fruits with nuts for festivities. Antonin Carême was the world‘s first confectioner.
Brazilian confectionery developed based on Portuguese recipes, which were gradually adapted to our ingredients and climate. Brazilian artistic confectionery once again became an example of foreign products that were very well adapted to the reality of our country, giving rise to something even better.

Previously, cakes needed to be very dry and firm to support the weight of the sugar decorations, something we can still see in many places. But here we managed to develop recipes and new decorating techniques to create a soft, moist and finely decorated cake, something that seems a contradiction in other countries.
The first sweet made and consumed was cannoli.
