It comes from the desert plains of Africa
Teff, a cereal considered by science as an aid to digestion, comes from the most deserted and poorest areas of Africa. It is in fact very rich in fiber, those substances that protect our body, allowing to speed up the metabolism and to better regulate the intestine. Also included by our Ministry in the list of products to use to stay healthy. Its flour is considered a gluten-free product and modern cuisine uses it to make a little of everything:

Teff is still almost unknown in many Western countries, but in Ethiopia and Eritrea, its homeland, it has been known since ancient times. Here the indigenous peoples call it “the health cereal”, thanks to its nutrients. Its seed is one of the smallest in the world and carries with it: carbohydrates, proteins, minerals, vitamins and fiber. In particular, teff stands out for its richness in calcium, zinc and vitamin B.
Particular and very curious thing is that thanks to its tiny size, even for the simple processing, the peel is not separated from the seed. Hence, all the nutrients end up on the tables of those who consume it. Products made with its flour are rich in bran and fiber, substances that help our body to go to the bathroom regularly.

The consistency of its flour is quite important, so much so that it is also an excellent thickener that can replace corn starch.
