How to prepare Anko

Let’s start the recipe with the processing of red beans. Let’s put the Azuki in cold water for 10-12 hours. After this time, let’s change the water and let them boil to soften the skins. It should take a couple of hours. Once the operation is completed, let’s drain them and pass them again in cold water.

It’s time to weigh them. Once we have discovered the weight of the treated beans we should take half the amount of sugar.

We are ready for cooking. Put half a glass of water, sugar and beans in a non-stick pan. We turn on the stove and mix well until the sugar has dissolved completely. At this point we just have to remove the mixture from the heat and blend it with a mixer. If we are satisfied with the consistency, put it still hot in the previously sterilized glass jars. If, on the other hand, the jam is still too liquid, let it cook for a few minutes. If not, or if it is too solid, we can add a few drops of water.

We fill the jars and store the Anko away from the sun and humidity.
