Indulge in a Gluten-Free Protein Cake: A Low-Carb, Light, and Irresistible Treat

The popular food website, iFood.it, recently shared a recipe for a delicious and guilt-free cake that is perfect for those with celiac disease and anyone looking for a low-carb and low-calorie option. The cake, which is made without gluten, is not only tasty but also easy to make with just five simple ingredients.

Each slice of this protein cake contains only 219 calories, making it a great choice for indulging in a sweet treat without the guilt. The recipe calls for 750 grams of unsweetened Greek yogurt, 150 grams of erythritol (a sugar substitute), four eggs, 50 grams of cornstarch or potato starch, 100 grams of dark chocolate, and some additional dark chocolate chips for garnish.

To make the perfect dough, iFood.it suggests freezing the dark chocolate and chocolate chips for at least twenty minutes before using them. This will ensure that the chocolate holds its shape and adds a delightful texture to the cake. While the chocolate is chilling, preheat the oven to 180 degrees Celsius in static mode.

The preparation of the cake is as simple as mixing the Greek yogurt, erythritol (or sugar), eggs, and cornstarch until a homogeneous mixture is achieved. Then, add the coarsely chopped dark chocolate and mix again. Transfer the batter into a round pan lined with baking paper, level the surface, and sprinkle it with chocolate chips.

Once the oven is preheated, cover the pan with another sheet of baking paper and bake for twenty minutes. After this time, remove the covering and continue baking for another forty minutes or until the surface of the cake is nicely browned. Before taking it out of the oven, let the cake rest for fifteen minutes with the door half open, and then let it rest for at least another fifteen minutes once it is out of the oven. Finally, when the cake is practically cold, divide it into eight servings.
