A unique project in the world created in one of the most beautiful places in Italy by an innovative startup, thanks to the trust of almost 280 investors and the involvement of important institutional and technical partners in a sector, that of friends, in which Italy is the world leader. This is the synthesis of the event held on October 27 in Portofino by Jamin, a leading reality in Italy in the cellar service and the only one dedicated tounderwater refinement with scientific method.

In fact, the largest immersion of wines and spirits in the history of underwater cellar: for the first time worldwide, thanks to the work of a group of oenologists, physicists, biologists and sommeliers, over twenty types of wines and spirits have been deposited in the sea in an unprecedented project for the variety of products involved and for the scientific and research content.

The goal is to experiment and then develop the techniques for refining wine and spirits below sea level, as well as to recover the new Underwater Champagne collection -52 already immersed a few months ago. The bottles deposited in the sea will be equipped with a sophisticated anti-counterfeiting system based on blockchain, the technology that protects the uniqueness of the bottle and allows you to discover the characteristics and trace the origin of the product even after immersion.

In the project, Jamin made use of the technical support of the Department of Agricultural, Food, Environmental and Forestry Sciences and Technologies of theUniversity of Florence andItalian sommelier association. An important partnership to better develop the oenological niche that deals with refining wines on the seabed to give life to a new category of products, the underwaterwines, which according to experts have different and surprising organoleptic, taste and olfactory properties compared to wines aged in traditional terrestrial cellars.

Between products cellars and in experimentation today, still white, red, rosé and fortified wines, sparkling wines, spirits and liqueurs, representatives of the best Italian production and of the great Italian denominations: Gin Portofino, Tenuta Campo al Signore Bolgheri, Niasca Portofino Vermentino dal Monte di Portofino Doc , Azienda Federici Giulio F, La Cappelletta Portofino Doc of the Duchess of Westminster Natalia Grosvenor, Piero Dry Gin, Francesco Intorcia Marsala, Mancino Vermouth, Primaterra Vini dell’Etna, Tenuta del hermit Ravenna and the famous Basanotto from Genoa.

To believe in the Jamin project were 279 financing partners involved thanks to Mamacrowd, the most important Italian platform for equity crowdfunding investments, which have invested more than that 600mila euro. “The project carried out by Jamin makes Italy the nerve center in research on underwater techniques related to oenology and on the development of wine cellars in the sea dedicated to wines and spirits in general – said Kottakhs -. The Portofino winery, born also thanks to the trust placed in Jamin by the Marine Protected Area, from today it becomes a precious laboratory for analysis and study. In the coming months we are aiming to strengthen a greater bond with the territory by opening underwater cellars throughout Italy dedicated to the cellar service for many producers who have looked for us and want to embrace this refinement technique “.
