TREVISO. The silhouettes of two ducks on the yellow background and the scent of fried fish began to intrigue the first customers about ten years ago, today Le Papere Itineranti have become a fixture in many neighborhoods. Even in 50 squares a week between Veneto and Friuli.

This is Albertini’s success, which by Christmas will also arrive in the historic center with a new gastronomy. It will open a stone’s throw from Porta Santi Quaranta, in the place of the old tobacconist that was on the corner at the beginning of Borgo Cavour. The works have just begun, the room has been brought back to the rough; there is everything to redo, from the systems to the finishes.

«We will bring the typical fried food of Papere, but also the fresh gastronomy that will be consumable for two or three days. To help us is the same technology used in many starred kitchens: instead of vacuum only, we will deliver vacuum packs but with a technical gas that contributes to conservation », says Filippo Albertini. The Borgo Cavour store will be just the latest addition to a year of great growth for Le Papere.

The pandemic was also helping to push the accelerator, causing delivery to surge. The duck food trucks are now able to cover 50 stations a week and will reach 60 shortly. In Treviso they are in Viale IV Novembre on Sunday and in Sant’Angelo on Saturday, but then they also cover Paese, Silea, San Biagio, Carbonera, Preganziol, Zero Branco, Monastier, Mogliano, Badoere, Spresiano, Maserada, Oderzo, Motta di Livenza, San Vendemiano, Conegliano, Vittorio Veneto, Follina, Pieve di Soligo, Valdobbiadene, Vidor, Asolo and Castelfranco. Then there are other stops in Venice, Padua, Belluno, Vicenza and Friuli. All this through five trucks, managed directly by the Albertini family, through employees.

«This year we will give the first truck in franchising for the province of Vicenza. But it will be managed by two people who have worked with us for a year and have learned our quality and our mentality », adds Filippo Albertini.

In addition to the trucks, Le Papere are also two restaurants, two laboratories and four delicatessens. Just this year they left Le Bandie in Spresiano, to move to the Laghetto delle Antille in via Vegri in Treviso, inaugurated a few weeks ago. Everything was born in the Bandie, from the idea of ​​Guido Albertini, chef and owner of the restaurant in Visnadello. «My dad wanted a place that offered something simple but of quality, which could bring many people together. The idea came from him and from our mother, Graziella », says Filippo who with his brother Alessandro has been following the entire Le Papere package from the beginning.

«My father always says that quality is not a question of possibility but of mentality. And that’s what we want to transfer to our simple kitchen as well. But he still goes to buy fish every morning at Tronchetto »confesses Filippo. Fish that is then processed and killed in the two Duck laboratories, and distributed in delicatessens and trucks. A success that oggi brings the company to count over 100 employees. To the delicatessens of Charity – the first – Conegliano, Montebelluna and Ponte della Priula arrived in 2020, two more will be added: Treviso, and another in a location reserved today.
