Ingredients:

Cook the eggs until soft, about 6-7 minutes. If you like, you can also cook them soft or hard. Quench and remove the shells. For the breading, place the flour, breadcrumbs and beaten eggs in separate bowls. Whisk the eggs and mix the two types of breadcrumbs.

Heat the oil. Place a wooden stick in the oil. If bubbles appear on it, the oil is hot enough for frying. Dip the eggs first in flour, then in the egg mixture and finally in the breadcrumbs. Then immediately add it to the frying fat and fry until golden brown. This takes about 3-4 minutes. Then place the eggs on kitchen paper and dab off the excess fat.

Ingredients for the sauce:

Put yogurt, butter and mustard in a pot and heat moderately. Mix all ingredients little by little until you get a smooth sauce. Do not let the sauce simmer strongly, otherwise it will flocculate. Season with salt and a little sugar.

You can choose the mustard according to your taste and also mix different types. You can also vary the amount of yogurt or butter.

Ingredients for the mash:

Peel and slice potatoes. Place in a pot and fill with water until just covered. Add some olive oil, 1 crushed garlic clove and some salt. Cook until soft, drain, reserving at least 1 cup of the cooking water.

Roughly mash the potatoes. Add butter and a little cooking water little by little until the desired consistency is reached. Season with salt and nutmeg. Wash, dry and roughly chop the parsley. Finally mix with the mash.

Divide the mash onto plates, pour the sauce over it and place the eggs on top.
