Ingredients:

The pieces of pork loin must first be cooked before grilling. To do this, clean the soup greens and onions. Heat cooking water. Add the prepared ingredients with the spices and the pieces of pork loin and simmer the meat over a moderate heat for at least 2 hours.

If you can easily insert and remove a knife, the meat is done. Remove the fat and gristle and leave the meat to cool.

Heat up a grill. Rub the ribs with olive or herb oil and salt (for the flavored oil, simply mix the herbs, chili, ginger and lemon zest with the olive oil and leave to soak). Place the meat on the grill and sear vigorously. Then reduce the heat or push the ribs to the edge of the grill.

Grill for 5-8 minutes. Place some sprigs of rosemary on the grill. Remove the meat from the grill and brush generously with teriyaki sauce and sprinkle with mashed potato chips.

Ingredients for the salad:

Clean the pointed cabbage, divide, quarter and finely slice. Peel the mango and cut the flesh into thin slices. Put both in a bowl and season and mix with olive oil, salt and sugar. Marinate for 20 minutes. Then add the broth and season the salad with maple syrup and lemon juice.

Add a little zest or fine shavings of lemon zest to taste. Mix the ingredients well and let them simmer for a while.

Further ingredients:

If you like, you can also put pineapple pieces on the grill. Place the beef ribs on a plate and serve with the pointed cabbage salad and the grilled pineapple.
