We often talk about damage caused by frying with reused oil. Eat fried foods cooked with already used oil increases the risk of developing dementia, such as Alzheimer’s. A new study analyzed data on the effects of food prepared especially in restaurants and fast food outlets that have the habit of using the same frying oil several times. The researchers found that theoil contains impurities that damage the brainwhich inevitably end up in the food we then eat.
Damage from frying with reused oil: the problem is inflammation
Researchers at the University of Chicago saw that inflammation levels were significantly higher in those who ate fried foods with used oil. In particular this inflammation damages blood vessels, accelerating cognitive decline. Naturally, the more often you eat foods cooked in this way, the higher the risk. The study focuses on long-term effects.

The habit of reusing oil is widespread
We know as they said that in restaurants, but also in homes, there is a habit of reusing oil several times. Typically it is used on average between two and eight timesalthough sometimes there are those who use it even more.
Other previous studies had already demonstrated the risks of eating food cooked in reused oil due to the chances of also ingesting peroxide, a chemical substance that damages the brain, e acrilammidewhich increases the risk of cancer.
Research on the harm of frying with reused oil
To prove their hypothesis, the researchers did tests on mice, dividing them into five groups:
the first ate only high-fiber foods with vegetable oils for thirty days, the other four groups ate foods cooked with mixed oils.
The results demonstrated that those among the mice had consumed food cooked with reused oil they had higher levels of liver inflammation. Damage to the colon as wellas well as the proliferation of bacteria that release dangerous toxins that can damage cells.
The researchers also put the brain under a microscope, demonstrating that those who had consumed reused oil caused damage that accelerated cognitive decline, therefore dementia.
Now the next step is to understand if the same happens in humans. However, the results worry experts, because the situation could be the same.
