The Academia del Gusto opens its doors to cooking lessons: 15 courses are ready

The higher education school was inaugurated at the Città Fiera. The center has teaching rooms and equipped laboratories

Udine and Friuli Venezia Giulia have welcomed the “Academia del Gusto Fvg”, the first food and wine training school in the region within everyone’s reach. Set in the new wing of the Città Fiera di Martignacco shopping center (first floor of the blue Mondo Casa area, next to the Leroy Merlin showroom), the school aims to fit into the realities of excellence on the Italian scene and become a reference point for everything the Northeast.

Born by the will of the Udine cooks association a year and a half ago and officially operational since January, the Academy was inaugurated yesterday – thanks to the relaxation of the restrictive measures for the containment of the pandemic – in the presence of the regional councilor for productive activities and tourism Sergio Emidio Bini, the patron of the Città Fiera shopping center Antonio Maria Bardelli, the president of the Academia del Gusto Fvg Daniele Piccoli, the president of the Regional Chefs Union Marinella Ferigo, the president of the Italian Federation of Chefs Rocco Pozzulo, the general manager Ial Fvg Gabriele De Simone and the deputy mayor of the Municipality of Martignacco Antonella Orzan.

«It is the symbol of the restart of a category among those most penalized by the pandemic which intends to start again to perform its service for the territory and the economy, aiming to offer quality and innovative elements – said Bini -; but it also represents a great opportunity for the training of young people and the enhancement of companies producing typical products which, together with the food and wine sector, are a driving force for tourism ».

The new “temple of cuisine” in the region will be a place of knowledge, meeting and growth to tell the story of the Italian and Friulian territory, but above all it will be open to all: professionals and operators in the sector, students of hotel institutes, lovers of cooking and gastronomic culture . The center has didactic areas, laboratory rooms and professional equipment distributed in 500 meters of space that will also act as a showcase for small agricultural and agri-food productions in the area.

The premises have been entirely designed and built in compliance with anti-Covid regulations and distances, with the best appliances and the best technology. At the moment three rooms are set up and operational, two more will arrive in autumn.

There are many training opportunities promoted including: cooking classes, room management, hospitality and the world of wine. The program is rich and varied and changes from month to month in close relation with the seasonality, quality and territoriality of the products. The courses – in which people aged 14 and over can participate – will be divided into five types: presentation of local products, show cooking and tasting; approach to the stove; professionals; children and the handicapped.

Already 15 are scheduled (registrations are already open) for June: from the preparation of classic appetizers, fish first courses, raw and tartare, pizza, bread and fresh pasta filled with Japanese ravioli, gourmet sandwiches, “Friuli at the table” (where you learn how to make cjarcions and frico) and “Passione Romana” (which reveals the secrets of how to prepare a pasta alla carbonara or cacio e pepe ad hoc).

In addition to courses and masterclasses, from Monday to Friday, the Academy will welcome the students of the Ial tourist hotel center who will have the opportunity to practice in specially designed rooms and achieve a highly qualified and 360-degree training.
