Vegetables are perfect for those who need, or want, to follow a diet. Maybe they are also the favorite dish of many Italians, since the Mediterranean diet includes them very often. However, many think that vegetables have little taste and, as a result, they abound with the use of oil or other fats to make them tastier.
The great chefs have already solved the problem by presenting some of these dishes to the public. At home we can take inspiration from them, or look for other alternatives. In fact, few know the secret to cooking and making vegetables without oil and fats tasty.
The secrets of taste
When we buy vegetables at the market or supermarket we must necessarily know their secrets. In other words, we must try to understand what their main taste is, if more tending towards bitter or sweet.
Since we have chosen not to use any seasoning, we must try to balance well the flavors that are already present in the vegetables themselves. For example, young courgettes have the ability to give the dish a strong taste of sweetness, while radicchio is known to be bitter. This is just an example, but we can apply it for all other vegetables.
Few people know the secret to cooking and making vegetables without oil and fats tasty
In particular, some cultures and some peoples of the world have already asked themselves this question and invented exceptional dishes. The real secret is right here: adding an ingredient that has a strong taste, capable of giving a touch of flavor and more decisive scents than those of vegetables.
An example above all is given by olives. In southern France, in Sicily and more widely in our South, olives are used. Of course, the original recipe of caponata or rataouille, for example, also features the use of extra virgin olive oil. What we can do is remove it, using only olives. The next time we go to cook zucchini or a peperonata we can, in fact, follow this simple procedure.
When we go to put our vegetables in the pan, we immediately add the salt. This way they will make water, allowing for even cooking. And, later, we can add olives or even a few pieces of dates. In this way the dish will flavor by itself during cooking, allowing us to experience a strong taste, without, however, giving up the benefits of the diet we follow.
